Parsnip and Thyme Mash
For 4 people, peel and chop 350g parsnips and 150g potatoes (peeled weight) and simmer until tender, drain well and mash with 90ml milk, 2tbsp freshly grated parmesan, 1tsp chopped fresh thyme, 1 tsp wholegrain or Dijon mustard and seasoning.
